STEAK LOVERS CHILI

This slow-cooker chili is the perfect meal for a busy day. The fresh cilantro will add a great burst of flavor and give your body the vitamin A it needs. The Keto Biscuits on page 82 go great with this dish.

Ingredients
  

  • 1 lb  grass fed steak, cut into 1-inch cubes
  • 1 Tbs ancho chili powder
  • ¼ tsp ground cumin
  • tsp salt
  • 1/8  tsp ground cayenne pepper
  • tsp ground black pepper
  • 1/4  cup  sliced leeks
  • 1 cup  canned tomatoes, whole with juice
  • 1/2  cup  chicken or beef stock* Toppings
  • 1 oz  shredded cheddar cheese
  • Tbs sour cream
  • 1 avocado, sliced or cubed
  • 1 Tbs chopped fresh cilantro

Instructions
 

  • 1. Place all ingredients, except the toppings, into a slow cooker in the order given.
    2. Stir, cover and set the slow cooker to high. Cook for about 6 hours, or until the steak is tender.
    3. Use a fork to shred some of the steak cubes and break up any tomatoes that remain intact.
    4. Serve the chili hot in bowls with any desired toppings.

Notes

*NOTE: Pacific organic beef and chicken broth are good options to purchase. 6 hours of prep time is dish cooking in the slow cooker.
