Ingredients
  

  • 4 cup Bok Choy, Roughly Chopped
  • 2 Spring Onions, Chopped
  • 1 quart Vegetable Stock
  • 2 tsp Ginger, Grated
  • pinch Salt and Black Pepper

Instructions
 

  • Put the stock into a pot, bring to a simmer over medium heat.
  • Add the bok choy and the other ingredients, bring to a simmer and cook for 25 minutes.
  • Blend the soup using an immersion blender, divide into bowls and serve.
