Ingredients
  

  • 1 Head of Cauliflower, cut into small florets
  • 2 tbsp Olive Oil
  • 1 tbsp Unsalted Butter
  • 1 cup Shredded Cheddar Cheese
  • ¼ cup Heavy Cream

Instructions
 

  • Preheat the oven to 450F. Line a baking sheet with foil or parchment paper.
  • In a large bowl, toss cauliflower florets, olive oil, and salt/pepper to taste.
  • Arrange the cauliflower florets on the prepared baking sheet. Roast for 15-20 minutes, until crisp-tender
  • In a small saucepan over low heat, heat the cheddar cheese, heavy cream, almond milk and butter stirring frequently, until smooth. Be careful not to overheat.
  • When the cauliflower is done, transfer to a large bowl. Pour the cheese sauce over the cauliflower and gently fold the sauce into the cauliflower until coated evenly.
