- 1 ripe tomato or 2 ripe tomatoes, cored and thinly sliced crosswise
- 4 oz. fresh buffalo mozzarella*
- 1 Tbs. extra virgin olive oil
- 1 tsp . red wine vinegar • salt and pepper
- 1 Tbs. chopped fresh basil
