Ginger and Bok Choy Soup

Ingredients
- 4 cup Bok Choy, Roughly Chopped
- 2 Spring Onions, Chopped
- 1 quart Vegetable Stock
- 2 tsp Ginger, Grated
- pinch Salt and Black Pepper
Instructions
- Put the stock into a pot, bring to a simmer over medium heat.
- Add the bok choy and the other ingredients, bring to a simmer and cook for 25 minutes.
- Blend the soup using an immersion blender, divide into bowls and serve.
