Ingredients
  

  • 8 Cubed chcken
  • 16 oz Paleo mayo
  • ¼ cup Rice vinegar, Apricot
  • 2 tbsp each Chopped scallion, curry powder
  • 2 tbsp Shredded carrot, salt and pepper

Instructions
 

  • Chop the chicken into bite size pieces and add to a large mixing bowl
  • Chop scallion and add to bowl
  • Add carrots and raisin
  • In a seperate bowl, toss together mayo, apricot vinegar and curry powder and mix to evenly blend
  • Enjoy
